Ingredients - cupcake tiramisu
- 110 g (½ cup) softened butter
- 110 g (½ cup) caster sugar
- 110 g (¾ cup) flour
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ tsp baking powder
- ¼ teaspoon salt
- 1-2 tablespoons milk
- For a coffee drink:
- 250 ml (1 cup) coffee
- 3 tablespoons caster sugar
- To cover:
- 225 g (1 cup) mascarpone cheese
- 250 ml (1 cup) whipping cream
- 55 g (½ cup) powdered sugar
- For decoration:
- cocoa powder
How to prepare - tiramisu cupcake
- Preheat the oven to 180 degrees Celsius and put the paper cups in the muffin tin.
- Sift flour, baking powder and salt together in a bowl.
- Beat the butter and sugar in an electric mixer until completely combined, then add the eggs one by one, then the vanilla extract.
- Add the flour mixture, stirring with a flat plastic spoon, until the ingredients are well mixed.
- Pour the mixture into paper cups using an ice cream scoop and bake the cupcakes for 15 minutes in the preheated oven.
- For a coffee drink:
- Boil the coffee and sugar in a small saucepan and let the mixture boil until its quantity reduces to half.
- To cover:
- Beat the cream with powdered sugar until it becomes cohesive.
- In another bowl, beat the mascarpone cheese, then add the whipped cream, stirring gently with a flat plastic spoon.
- To prepare the cupcake:
- Grease the cupcake with coffee syrup while it is still hot.
- Transfer the topping mixture to a 10mm diameter nozzle decorating bag and decorate the cupcake tops with it.
- Sprinkle cocoa powder on top of the cupcake to decorate.
